The AZCOA Olive Oil has a Protected Designation of Origin (DOP) and is produced entirely by organic methodologies and techniques.
AZCOA Olive Oil is produced mainly from the “Cobrançosa”, “Verdeal” and “Madural” olives varieties. Its harvest season is between October and January, and its picked-up manually (using long wooden sticks) and also using mechanical vibration. Only the olives in the tree are used (the ones already on the ground are not!).
The initial taste is characterized by a gentle almond flavour, followed by an intense flavour of fresh olives and green fields. At the end, we are surprised by a spicy note in the throat, but not a bitter aftertaste.
